Preparation steps

Rinse asparagus, snap off ends and cook in plenty of salted boiling water, about 9 minutes. Drain. Rinse snow peas and blanch in plenty of salted boiling water, about 5 minutes. Drain. Shell peas and cook and in plenty of salted boiling water, about 5 minutes. Drain. Shell beans and cook in plenty of salted boiling water, about 6 minutes. Drain.

Cut bacon into strips and fry in a large frying pan. Season with salt and pepper. Add peas, beans, asparagus and snow peas. Drizzle with 5 tablespoons good-quality olive oil. Season with a little more salt and pepper and mix well with bacon. Serve warm, garnished with parsley sprigs. Serve with fried potatoes, if desired.
