- 2 Red chili peppers
- 1 centimeter fresh ginger
- sesame oil
- 50 milliliters Chicken broth
- 3 Tbsps soy sauce
- 1 Tbsp Lime juice
- 1 tsp Palm sugar
- 600 grams Tuna steak (ready to cook)
- 1 Cucumber
- 400 grams Watermelon
- freshly ground salt
- freshly ground peppers
- Sprout (for garnish)
- Shiso leaf (for garnish)

Preparation steps

For the dip: Rinse chiles and cut into rings. Peel ginger, chop and sauté with chile rings in hot pan with 1 tablespoon oil. Pour in broth, soy sauce and lime juice, bring to boil and season with a little sugar. Allow to cool and pour in small bowl.

Rinse tuna, pat dry, remove tendons and skins and cut remaining tuna into thin slices.

Rinse cucumber, halve lengthwise and crosswise and remove seed. Cut watermelon flesh into long, thin strips. Wrap 2 cucumber slices and watermelon strips in each tuna slice, sprinkle with salt and pepper and arrange on plates. Drizzle with a little oil and garnish with sprout and shiso leaves. Serve tuna rolls with chile dip.
