Preparation steps

1.

Cut beef slices into 3 cm pieces (approximately 1 inch). Heat oil in a pan and brown beef on all sides.

2.

Peel and rinse potatoes and carrots, cut into bite-sized pieces. Peel onions, halve lengthwise and cut lengthwise into thin wedges.

3.

Add potatoes, carrots and onions to beef and brown, turning often.

4.

Combine bonito flakes with 3 cups of water, remove from heat and let stand for about 1 minute. Wait until flakes sink to the bottom, strain broth through a cheese cloth. Pour broth into the pot, bring to a boil, removing all resulting foam. Add sake, sugar and soy sauce.

5.

Add broth to beef pan and simmer on medium heat until almost all broth has evaporates. Arrange in bowls and serve.
