Arugula Salad with Prosciutto Wrapped Figs
This light starter or side combines meat, cheese, and fruit all into one delightful dish. It is packed with nutrients from the figs, protein from the meat, and healthy fats and calcium from the mozzarella.
You can serve this as an appetizer by itself or you can serve it as a side along with some bread to make it more filling.
On a platter, prepare a bed of arugula.
Quarter the figs, wrap each one in a slice of prosciutto and place them on the arugula.
Cube the mozzarella and arrange around the prosciutto wrapped figs on the platter.
