Preparation steps

1.

Trim artichokes by cutting off the tip and tail. Immediately rub cut surfaces with lemon half, so that artichokes do not darken. Simmer artichokes in a large pot of boiling water with lemon half for about 30 minutes until leaves easily pull out.

Mix oil in a bowl with vinegar, salt and pepper. Peel garlic and press using a garlic press into the bowl and season with salt, pepper and parsley. Drain artichokes well, arrange on plates and serve with prepared vinaigrette.
