- 600 grams Crabmeat
- 600 small new potatoes
- 2 Tomatoes
- salt
- lemons (juiced)
- salt
- freshly ground peppers
- 4 Tbsps White vinegar
- 5 Tbsps olive oil
- 2 Tbsps butter
- Fresh herbs for garnish as desired (eg. as dill, chervil)

Preparation steps
1.
Remove the stems and lower leaves of the artichokes and trim the hard tips from the leaves.
2.
Blanch the artichokes in boiling salted water with lemon juice for about 30 minutes. Remove and allow to drain briefly.
3.
Blanch the tomatoes for a few seconds, rinse, peel, quarter and remove the seeds.
4.
Mix together the vinegar and 5 tablespoons of oil and season with salt and pepper to make a marinade. Coat the artichokes and tomatoes and let sit for about 10 minutes, then arrange on plates.
5.
Sauté the crab meat in warm butter, season with salt and pepper and arrange on the artichokes. Garnish with fresh herbs and serve.
