800 grams starchy potatoes
250 grams Pastry flour
2 eggs
1 pinch salt
1 kilogram Apricot
Sugar cube (for the apricots)
140 grams Amaretti cookies
100 grams butter
1 Tbsp sugar
powdered sugar (for dusting)

Preparation steps

Peel the potatoes, chop and cook in salted water for about 30 minutes until tender. Drain, press through a potato ricer then let the steam evaporate. Mix in the flour, eggs and salt and knead until smooth.

Rinse the apricots, cut in half and pit. Sandwich the apricot halves back together with a sugar cube in the center of each.

Roll out the potato dough on a floured work surface and shape into 6 cm (approximately 2 1/4 inch) thick strands. Cut into 3 cm (approximately 1-inch) thick slices, flatten slightly and then use to fully cover the apricots, about 1 cm (approximately 1/3 inch) thick. Shape into dumplings and cook in boiling salted water for about 10 minutes.

Crush the cookies.

Melt the butter in a frying pan and toast the cookie crumbs until golden brown. Remove from the heat, mix in the sugar and then use to coat the drained dumplings.

Serve dusted with powdered sugar.
