Bring butter, honey and sugar to a boil in a small pot.
Rinse orange in hot water, dry and cut in half. Finely grate 1 teaspoon zest, then squeeze juice.
In a mixing bowl, combine 1 tablespoon orange juice, the zest, spelt flakes, grated coconut, almonds, diced apricots and butter mixture.
Spread mixture on a parchment-lined baking sheet with a moistened rubber spatula until about 1.5 cm (approximately 1/2 inch) thick. Bake on middle rack of preheated oven at 150°C (approximately 300°F) for about 25 minutes. Remove from oven and allow to cool completely before cutting into bars.
