2 Chicken breasts (550 grams)

3 Apricot
Lemon balm
2 tsps honey
Curry powder
2 Tbsps clarified butter

Preparation steps

1.

Fillet chicken breasts. Season with salt. Rinse and pit apricots and dice finely. Chop lemon balm leaves finely.

Unfold chicken breasts and brush with honey. Arrange lemon balm and apricots on top and fold meat, secure with toothpicks and season with curry powder. Heat butter in a pan and cook chicken breasts for about 5 minutes per side or until golden brown. Cover and simmer on low heat for about 5 minutes more or until chicken is done (when pierced, juices should run clear).

Remove toothpicks and slice breasts. Arrange on plates and serve.
