½ Vanilla bean (slit)

Preparation steps

1.

Blanch apricots, peel, halve and pit. Place into a baking dish, cut side up. Sprinkle with 1/2 tablespoon of sugar and cereal mixture.

Separate eggs. Beat egg whites until semi-stiff. Gradually add 1 tablespoon of sugar and beat until tstiff.

Add egg yolks, cream, vanilla and lemon zest to egg whites. Spread custard over apricots and sprinkle with remaining sugar.

Bake in preheated oven at 200°C (approximatley 400°F) for about 20 minutes or until golden yellow. Serve.
