1 lemon (juiced)
200 grams lamb's lettuce
2 Tbsps apple cider vinegar
1 Tbsp Walnut oil
½ tsp hot Mustard
1 pinch sugar

1 smoked duck leg (300 grams)
50 grams Walnut

Preparation steps

1.

Brush 4 plates thinly with about 1 tablespoon olive oil. Rinse the apples, quarter, cut out the core, and cut into very fine slices. Add the apple slices into a bowl of lemon water.

Rinse, trim and shake dry the lettuce.

For the vinaigrette, mix the apple cider vinegar with the walnut oil, the remaining olive oil, mustard and sugar, and season with salt and pepper.

Take out the apple slices from the water and pat dry. Place the apple slices on the plates in a fan-like design. Place the lettuce in the middle. Cut the duck breast into thin slices and arrange over the apples. Chop the walnuts coarsely, sprinkle over the duck breast and drizzle over the vinaigrette.

4.

Serve with some fresh bread.
