3 sticks Celery (thinly sliced, leaves set aside to garnish)
½ cup shelled Walnut (roughly chopped)
3 Boskop Apple (chopped)
2 Tbsps lemon juice

Preparation steps

To make the mayonnaise, mix the egg yolk with the lemon juice. Add the oil, first one drop at a time, then in a thin stream, stirring until a creamy mayonnaise is formed. Stir in the cream and season to taste with salt and ground black pepper.

Drizzle the apple pieces with the lemon juice and combine the salad ingredients with the mayonnaise and season well.

Serve garnished with celery leaves.
