4 Tbsps Apple jelly
4 Tbsps lemon juice
1 pinch cayenne pepper
1 ½ kilograms salted Roasted pork (with rind)
5 grams cloves
500 grams Pearl onion
salt
freshly ground peppers

Preparation steps

1.

Preheat the oven to 180°C (approximately 350°F).

Heat apple jelly in a pan. Stir in lemon juice and cayenne pepper.

Rinse pork with cold water, pat dry and slice the skin in a diamond pattern. Press cloves into skin. Place roast in a roasting pan and add 200 ml (approximately .8 cup) of water. Brush roast with a little apple glaze and roast for about 1.5 hours. Baste with glaze and water throughout cooking time.

Meanwhile, briefly blanch onions shock in ice water and peel. Add to roast after 1 hour of cooking. Season with salt and pepper.

4.

Remove roast from oven, slice and serve with onions.
