- For the cupcakes
- 1 cup self-rising flour (heaped)
- ½ tsp Baking powder
- ½ tsp ground cinnamon
- ¼ cup superfine caster sugar
- 1 egg
- ¼ cup milk
- 2 Tbsps sunflower oil
- 1 Apple (peeled and grated)

Preparation steps
1.
Preheat the oven to 180°C (160° fan) 350°F gas 4. Line a baking tray with non-stick baking paper.
2.
Combine half the water and lemon juice in a bowl large enough to contain all the apple slices. Add the apples and set aside.
3.
Heat the remaining water and sugar in a pan until the sugar has dissolved. Bring to a boil and set aside.

Place the apple slices on the baking tray and brush each slice with the syrup. Bake for 5-7 minutes until softened, then set aside to cool.

Grease 6 muffin tins. Arrange the apple slices around the edges of the tins, overlapping and making sure they come above the tins.

For the cupcakes: sift together the flour, baking powder, cinnamon and sugar in a mixing bowl.

Whisk together the eggs, milk and oil. Pour into the dry ingredients and mix until just combined, then stir in the grated apple.
8.
Spoon into the tins and bake for about 20 minutes until the cakess are well risen and firm. Cool in the tins for 5 minutes, then place on a wire rack to cool completely. Wrap any apple slices that have come off, around the cakes.
