8 crisp, green Apple (cored and quartered)
1 cup water
¼ tsp salt
1 ½ cups sugar
1 lemon (juice)

Preparation steps

1.
Line a 20cm|8" square tin with non-stick baking paper.
2.
Combine the apples and water in a pan. Cover and cook over a medium heat until the apples are soft.
3.
Press the mixture through a sieve into a bowl.
4.
Return the puree to the pan and add the salt, sugar and lemon juice. Bring to a simmer and cook for about 1 hour, stirring frequently until thick and holding its shape.
5.
Spread evenly in the tin and leave to stand, uncovered overnight.
6.
Turn out of the tin onto a sheet of non-stick baking paper. Cut into squares and leave to dry for 1 hour.
