1 tart Apple (such as Granny Smith)
1 organic lemon (juiced)
1 Banana
1 Cucumber
10 Ice cubes
mineral water (to fill)
salt
1 small shallot
1 tsp scallions
1 Pickled herring

Preparation steps

Peel and quarter the apple. Remove the seeds and finely dice. Mix the apple with the lemon juice, setting 2 tablespoons aside for garnish.

Peel and dice the banana. Peel the cucumber and halve lengthwise. Scrape out the seeds, and finely dice 2 cm (approximately 3/4 inch). Add the diced cucumber to the reserved apples. Puree the banana, cucumber, apples, and ice cubes in a blender. Mix in enough mineral water to rezch your desired consistency. Season to taste with a little salt.

Peel and finely dice the shallot. Mix with the reserved apples and cucumbers. Mix in the chives and toss to combine.  Cut the herring into 4 bite-sized pieces. Pour the smoothie into 4 glasses, top with the apple-cucumber mixture and a piece of herring, and serve.
