Even smarter

The essential oils from lavender have a calming effect and can promote a restful sleep. In addition, the lavender apple cake gets an unmistakable aroma from the medicinal herb.

When using lavender from your own garden, you should make sure that it is real lavender. The dried flowers can then easily be used in lavender apple pie with sprinkles.

175 grams butter
150 grams sugar
4 eggs
1 pinch salt
2 teaspoons Baking powder
400 grams Pastry flour
100 milliliters milk

60 grams ground almonds
For the topping
1 kilogram Apple
1 lemon (juiced)
2 tablespoons cornstarch
2 tablespoons Vanilla sugar
For the crumble
100 grams Pastry flour
150 grams ground almonds
100 milliliters Advocaat
50 grams sugar
75 grams butter
powdered sugar (for dusting)

Preparation steps

Line baking pan with parchment paper.

For the batter: whisk butter at room temperature until foamy. Add eggs and sugar, alternating. Season with salt. Combine flour with baking soda, add to batter, alternating with milk until batter is smooth and spreadable. Spread batter in a baking pan, smooth and sprinkle with almonds.

For the topping: peel and dry apples, quarter and core, cut into small pieces. Mix with lemon juice, cornstarch and vanilla sugar and spread evenly on top of batter.

Fot the crumble: mix flour with almonds, eggnog and sugar. Melt butter and add to the mixture, process with your hands until crumbly. Sprinkle crumble over apples.

Bake cake in preheated oven at 180°C (approximately 350°F) for about 50 minutes or until golden brown. Remove from oven, let cool and cut into pieces. Dust with powdered sugar and serve.
