Preparation steps

For the dough: Combine the flour, baking powder and lemon zest, make a well in the center, add the honey, sugar, egg yolk and egg to the well and distribute the chopped butter around the edges. Knead until smooth, cover with plastic wrap and chill for 30 minutes in the refrigerator. Roll out 2/3 of the dough into a large disc and use to line a greased and floured springform pan.

For the filling: Peel the apples, cut into quarters, remove the core and thinly slice. Toss with the lemon juice, mix in the honey, cinnamon, vanilla sugar, custard powder, walnuts and raisins then transfer to the prepared pie shell. Roll out the remaining dough and use to cover the filling and seal the edges. Prick the lid with a fork several times and bake in a preheated oven at 180°C (approximately 350°F) convection for about 50 minutes, until golden brown. Remove from the oven and let cool in the mold. Remove from the mold and dust with powdered sugar using a lattice template.
