Banderilla Cinnamon Cookies

Preheat oven to 425°F
Lightly dust clean work surface with flour. Roll out pastry dough one sheet at a time. With pizza cutter or sharp knife cut dough into rectangles, approximately 1" wide and 3" long.
Place dough strips on a non-stick cookie sheet.
In a small bowl combine sugar and cinnamon, stir well until completely combined.
Dip pastry brush in water and lightly brush across each dough piece. Sprinkle generously with the cinnamon sugar mixture.
Bake dough for 20 minutes or until golden brown and puffy. Remove from oven and cool slightly before serving.
