For the base
5 Apple
3 Tbsps lemon juice

3 Tbsps brown sugar (for dusting)
For the dough
180 grams butter
100 grams sugar
60 grams honey
4 eggs
salt
300 grams Pastry flour
2 tsps Gingerbread spice
60 grams ground almonds
2 tsps Baking powder
125 milliliters milk

Preparation steps

1.

For the apples: Peel, quarter, core and thinly slice apples. Mix immediately with lemon juice.

Preheat oven to 180°C (approximately 350°F).

Grease a springform pan with butter. Dust the bottom of the pan with brown sugar and spread apples slices, using enough to coat the base in a single layer. Set remaining apples aside.

For the dough: Cream butter, sugar and honey until creamy and gradually stir in eggs and a pinch of salt. Combine flour, spices, almonds and baking powder. Alternate adding dry ingredients and milk to butter mixture.

Dice remaining apple slices, lightly dust with flour and fold into dough. Pour over apple slices and into pan. Bake for about 50 minutes.

Remove cake from oven, let it rest briefly and flip over onto a plate. Slice and serve lukewarm or cold with vanilla ice cream, as desired.
