Ingredients

For loaf

2 ½ cupsAll purpose flour
¼ teaspoonssalt
1 teaspoonBaking powder
1 cupsugar
2 teaspoonsground cinnamon
½ cupsbutter melted
1eggs
½ cupsmilk
1 ½ cupsdiced Apple
⅓ cupsraisin
2 tablespoonsDemerara Sugar

Directions

1 Heat the oven to 180°C (160° fan) 350°F gas 4. Lightly grease a loaf tin.
2 Mix together the flour, salt, baking powder, sugar and cinnamon in a mixing bowl.
3 Mix together the melted butter, egg and milk. Gently stir in the apples and raisins.
4 Stir into the flour mixture until well blended.
5 Spoon into the loaf tin and sprinkle the top with 1 tablespoon demerara sugar.
6 Bake for about 35-45 minutes until golden and cooked through. Sprinkle the remaining demerara sugar over the hot loaf.
7 Cool in the tin for 10 minutes, then place on a wire rack to cool.
