Apple Loaf Cake
- 2 ½ cups all-purpose flour
- ¼ tsp salt
- 1 tsp Baking powder
- 1 cup sugar
- 2 tsps ground cinnamon
- ½ cup butter (melted)
- 1 egg
- ½ cup milk
- 1 ½ cups diced Apple
- 0.333 cup raisins
- 2 Tbsps brown sugar
Heat the oven to 180°C (160° fan) 350°F gas 4. Lightly grease a loaf tin.
Mix together the flour, salt, baking powder, sugar and cinnamon in a mixing bowl.
Mix together the melted butter, egg and milk. Gently stir in the apples and raisins.
Stir into the flour mixture until well blended.
Spoon into the loaf tin and sprinkle the top with 1 tablespoon demerara sugar.
Bake for about 35-45 minutes until golden and cooked through. Sprinkle the remaining demerara sugar over the hot loaf.
Cool in the tin for 10 minutes, then place on a wire rack to cool.
