8 fresh, read to cook Anchovy fillet

2 Tbsps fennel seeds
2 garlic cloves

Preparation steps

1.

Rinse anchovies, pat dry and season with salt and pepper. Peel and dice garlic. In a pan, sauté anchovies in 4 tablespoons hot oil, 2-3 minutes per side. Drain anchovies on paper towels.

Add two more tablespoons oil to the pan. Add garlic and fennel seeds and sauté until garlic is golden. Remove pan from the heat. Drizzle anchovies with garlic-fennel oil and season again with salt and pepper if needed. Serve anchovies with a lettuce and sliced fennel salad, if desired.
