75 grams ground, blanched almonds
3 Tbsps cornstarch
400 milliliters Almond milk
60 grams sugar
1 tsp lemon juice
2 Tbsps toasted slivered almonds

Preparation steps

Separate the eggs. Whisk the heavy cream, egg yolks and rose water in a bowl. Mix in the ground almonds and cornstarch. Boil the almond milk and sugar in a pot. While stirring, pour the almond-yolk mixture into the pot and continuing to stir and as it thickens. Beat the egg whites and lemon juice until stiff. Fold into the almond pudding and fill glasses with the pudding. Cover and chill for at least 1 hour in the refrigerator.

To serve, sprinkle with sliced almonds and a pinch of cinnamon.
