Ingredients

For the macaroons
4 egg whites
1 pinch salt
1 tsp lemon juice
170 grams powdered sugar
250 grams ground almonds
75 grams chopped almonds
also
100 grams Dark couverture chocolate

Preparation steps

1.

Preheat oven to 150°C (approximately 300°F). Beat egg whites with salt and lemon juice until very stiff. Sprinkle with powdered sugar and continue beating until mixture is glossy and stiff peaks form. Fold in ground almonds.

Using a teaspoon, place small heaps of egg white mixture on a baking sheet lined with baking paper. Sprinkle with chopped almonds. Bake for 20-25 minutes. Remove and cool. Chop chocolate coarsely and melt over a hot, but not boiling, water bath.

Top half of the macaroons with melted chocolate and top with remaining macaroons. Press together lightly. Place remaining chocolate in a freezer bag and cut a small corner away. Pipe macaroons as desired. Dry and serve.
