150 grams butter
5 egg whites
250 grams powdered sugar
135 grams ground almonds
60 grams Pastry flour
1 organic Orange (zested)
butter (for greasing the molds)
6 Tbsps slivered almonds

Preparation steps

1.

Grease the financier molds with the butter well.

Let the butter melt in pan over medium heat, foam slightly, and cook until it is lightly browned (nut butter). Then let the butter cool to room temperature again.

In a large mixing bowl, beat the egg whites until soft peaks form. Mix in the sieved icing sugar, almonds, sieved flour and orange zest. Add in the melted butter and fold carefully.

Pour the egg white mixture into the greased financier molds till half and sprinkle with sliced almonds.

Bake in a preheated oven at 230°C (fan: 210°C, gas mark 5)(approximately 450°F) for about 5 minutes, and then at 200°C (fan: 180°C, gas mark 3)(approximately 400°F) for another 5 minutes. Turn off the oven and leave the cake in the oven for another 5 minutes.

Allow to cool slightly, but take the cookies out of the the molds when they are still warm.
