400 grams Bread flour
100 grams Rye flour
1 cube Yeast
1 tsp sugar
250 grams Zucchini
1 tsp salt
1 egg
50 grams chopped Walnut
30 grams chopped Hazelnuts
Pastry flour (to work)
3 Tbsps milk
3 Tbsps chopped Nut (to sprinkle)

Preparation steps

Rinse and grate the zucchini.

Sift the flour into a bowl and form a well in the center. Add the yeast and stir with a little lukewarm water and sugar. Dust with some flour and let the dough rise for about 10 minutes. Add the zucchini and 200 ml (approximately 1 cup) of lukewarm water. Add the egg and knead into a smooth dough. Let sit for about 45 minutes in a warm place. 

Place the dough on a floured work surface and add the salt and nuts. Knead well. Pour the dough into a lined bread pan, brush with milk and sprinkle with nuts. Let sit for about 60 minutes. Bake for 40-45 minutes at 200°C (approximately 400°F). Remove from the oven, let stand briefly and remove from the pan. Let cool on a wire rack. Serve warm.
