Preparation steps

Rinse zucchini, halve lengthwise and cut into small cubes. Blanch tomatoes in boiling water, then rinse, peel, cut in half, remove seeds and cut into small cubes. In a frying pan, sauté shallots in hot oil until translucent. Add zucchini and cook over medium heat, about 1 minute.

Stir in tomatoes and cook briefly (tomatoes should be al dente). Season with salt and pepper. Meanwhile, toast bread and spread with a little butter. Layer bread with vegetables and sprinkle with Parmesan. Serve garnished with basil leaves.
