1 shallot
2 garlic cloves
2 Tbsps olive oil
salt

1 tsp sugar
400 grams Spaghetti
100 grams shaved Parmesan
Basil (for garnish)

Preparation steps

1.

Blanch tomatoes for a few seconds in boiling water, peel, quarter, core and dice finely. Peel the shallot and garlic, chop finely and sauté in hot oil until translucent.

Add tomatoes, season with salt, pepper and sugar and simmer, covered, for about 15 minutes over low heat. Season to taste.

3.

Cook spaghetti in plenty of boiling salted water until al dente. Drain the pasta and top with the tomato sauce. Sprinkle with Parmesan and serve garnished with basil.
