1 bunch Chives (or other fresh herbs)
1 red onion
1 tsp pickled green peppers
200 grams Goat cheese

Preparation steps

1.

Rinse, trim and cut the zucchini lengthwise into 1/2 cm (approximately 1/4 inch) thin slices. Peel the garlic.

2.

Heat oil in a pan and saute the zucchini in portions until golden brown on both sides. Add salt, pepper and garlic. Remove from the pan, degrease on a kitchen towel and let cool slightly.

Rinse the chives, shake dry and cut into rings. Peel the onion and finely chop. Mash the peppercorns with a fork. Mix everything together and mix half of it with fresh goat cheese.

4.

Mold 20 balls from the cheese mixture and roll the balls in the remaining chives and onion mixture. Roll each zucchini slice around 1 cheese ball and stick with a toothpick. Serve with toasted white bread.
