Preparation steps

1.

Rinse and trim the zucchini and cut lengthwise into very thin slices, or plane with a vegetable peeler.

Drain the feta cheese and cut into 1 cm thick sticks (approximately 1/2 inch). Drain the tomatoes, taking care to collect the oil. Rinse the arugula and shake dry.

Season the zucchini slices with salt and pepper and place a piece of feta and 1-2 dried tomatoes on one end. Lay some arugula leaves on top and roll up the zucchini into rolls. Secure with a toothpick and brush with a little tomato oil.

Grill for 5-7 minutes while turning.
