3 ½ ozs Cottage cheese
3 eggs
½ tsp Vanilla
2 ozs Spelt flour
2 pinches baking soda
1 Tbsp Coconut oil
10 ozs Fruit (of the season)
2 Tbsps honey

Preparation steps

1.

Whisk the yogurt, cottage cheese, eggs, and vanilla together. Stir in flour and baking soda until a viscous dough is formed.

2.

Heat oil in a coated pan, add 1 tablespoon of batter to each pan and bake 4 to 6 pancakes for about 3-4 minutes at medium heat from both sides until golden brown.

3.

Wash, chop and mix the fruit on the side. Serve pancakes with the fruit and honey.
