- ⅜ cup honey
- 1 cup Apple juice
- 1 tsp vanilla extract
- 9 ozs Rhubarb cut in 10cm (4") lengths
- 2 red, eating Apple (peeled, cored & thickly sliced)
Preparation steps
1.
Put the honey, apple juice and vanilla in a pan over a low heat, stirring until dissolved.
2.
Add the rhubarb and apples and bring to a simmer. Cover and cook for 5-10 minutes until the fruit is just tender.
3.
Serve warm or chilled.
