- 1 ½ cups Wild rice (rinsed in cold water)
- ¾ cup Peanuts
- ½ cup shelled Pistachio
- ⅓ cup olive oil
- 1 lemon (juiced)
- 2 large, ripe Peaches (pitted and cut into wedges)
- cilantro (chopped)
- mint (torn)
- 1 small Red onion (finely chopped)
- 2 scallions (finely sliced)
- salt
- freshly ground Black pepper

Preparation steps
1.
Combine 6.5 cups of water in a saucepan with a couple of teaspoons of salt. Bring to the boil, stirring occasionally. Add the wild rice, return to a boil, and then cook over a reduced heat for 40 - 45 minutes until the grains begin to split and are tender.

Drain the rice and spread it out on a large tray, leaving it to cool. As the rice cools, add the nuts to a large, dry frying pan set over a moderate heat. Toast until lightly coloured and nutty in aroma. Remove from the heat.

Once the rice is cool, toss in a large mixing bowl with the nuts, olive oil, lemon juice, peach slices, herbs, and red onion. Season to taste with plenty of salt and pepper.
4.
Spoon the rice onto a serving platter and garnish with spring onion before serving.
