Wild Leaves with Bread Cubes
- 4 slices white Bread (crusts cut off, diced)
- 2 Tbsps butter
- 1 tsp hot Mustard
- ½ tsp sugar
- 1 Tbsp white wine vinegar
- 2 Tbsps lemon juice
- 5 Tbsps Wheat germ oil
- 3 cups Sorrel
- 2 cups Dandelion greens
- 1.333 cups Emmentaler cheese (diced)
- ½ bunch Chervil (leaves removed)

Fry the bread in hot butter until crispy then pat dry with kitchen paper.
To make the vinaigrette, mix together the mustard, sugar, vinegar and lemon juice and season with salt and ground black pepper. Whisk in the oil and season to taste.
Arrange the lettuce, cheese and the chervil on plate, drizzle with the vinaigrette and garnish with the croutons.
