250 grams Wild garlic
1 l Vegetable broth (Instant)
2 garlic cloves
2 Tbsps vegetable oil
2 shallots
2 Tbsps butter
salt
freshly ground peppers
200 grams Whipped cream
2 egg yolks

Preparation steps

1.

Peel the wild garlic and rinse it. Boil in salted water, then drain and rinse in cold water.

Peel and finely dice the shallots. Sweat the shallots in butter. Add the wild garlic and the pressed garlic cloves and saute briefly. Add the broth and bring to a boil. Remove from the heat and puree everything in a blender. Whisk together the cream and egg yolks and stir into the soup. Season with salt and pepper.

3.

Pour the soup onto plates and serve garnished with wild garlic strips.
