Whole-grain Cheese and Bell Pepper Sandwiches
Rinse the bell pepper, cut in half, remove seeds and cut into narrow strips. Trim cress, rinse and drain well. Season cream cheese with salt and pepper. Spread half of the whole-grain bread with the cream cheese and top each with a slice of cheddar cheese, a few strips of pepper and some watercress. Top with another slice of bread.
Repeat with the Pumpernickel slices and the remaining cheese and vegetables. Cut sandwiches in half on the diagonal and serve.
