Ingredients
- For the batter
- 5 eggs
- 1 pinch salt
- 200 grams sugar
- 1 packet Vanilla sugar
- 75 grams Pastry flour
- 40 grams cornstarch
- 30 grams cocoa powder
- 1 Tbsp instant Coffee powder
- 1 tsp Baking powder
- For the custard
- 6 egg yolks
- 30 grams sugar
- sliced and seeds scraped Vanilla bean
- 20 grams Pastry flour
- 30 grams cornstarch
- milk
- 100 grams white and 100 grams or 3.5 ounces of dark Chocolate
- 250 grams white Couverture
- powdered sugar (for dusting)
Preparation steps
For the batter: Separate eggs. Beat whites, 6 tablespoons of cold water and salt until stiff. Beat in sugar and vanilla. Stir in egg yolks. Combine remaining ingredients and fold into eggs. Divide dough in half. Grease a star pan and pour in batter. bake in an oven preheated to 175°C (approximately 350°F) for 30 minutes.
