- 11 ozs white chocolate (broken)
- ⅛ cup unsalted butter
- ⅞ cup cream (48% fat)
- 1 tsp vanilla extract
- 2 Tbsps powdered sugar

Preparation steps
1.
Line a 1.2 litre|2lb loaf tin with a double layer of cling film allowing it to overhang the edges.
2.
Arrange rows of sponge fingers, widthwise, across the base. Sprinkle evenly with the sherry.
3.
Melt the chocolate in a heatproof bowl over a pan of simmering (not boiling) water. Remove from the heat and leave to cool.
4.
Whisk the cream with the vanilla and icing sugar until it just holds its shape. Fold in the melted chocolate until evenly mixed.
5.
Spoon into the tin and smooth the top. Fold the overhanging cling film over the tin. Chill for at least 24 hours.
6.
Whisk the cream until stiff and spoon into a piping bag. pipe on top of the chocolate filling. Cut into slices to serve and decorate with mint leaves and macaroons.
