150 grams button Mushroom
2 red onions
1 Tbsp butter
2 tsps powdered sugar
50 milliliters dry Red wine
2 Tbsps balsamic vinegar
salt
freshly ground peppers
1 shallot
400 grams ground pork
1 Tbsp finely chopped parsley
1 egg
1 Tbsp breadcrumbs (as needed)
3 Tbsps olive oil
150 grams Soft cheese (such as, Brie, Camembert)
1 handful lamb's lettuce
4 slices white bread

Preparation steps

Trim the mushrooms and cut into slices. Peel the onion, cut into thin rings and sweat in some butter. Add the mushrooms and cook until lightly browned. Add the sugar and let it caramelize slightly and then deglaze with the red wine and vinegar. Simmer over medium heat for about 10 minutes until the liquid has evaporated and the onions are soft. Season with salt and pepper.

Peel and finely chop the shallots and mix with the meat, the parsley, the egg and the breadcrumbs in a bowl. Knead everything together and if necessary add some extra breadcrumbs. Shape into four patties and fry in some oil in a hot grill pan for about 6 minutes on each side.

Cut the cheese into slices. Rinse the lettuce and pat dry. Remove the patties from the pan and briefly fry the bread in the remaining oil until crisp on both sides.

Cover half the bread slices with the salad, lay a pattie on top with a slice of cheese. Spoon the mushroom-onion mixture over the cheese and place the remaining bread slices on top.

Serve immediately and halved if desired.
