- 2 garlic cloves
- 4 Tbsps olive oil
- 2 cups Chicken broth
- 4 sprigs thyme
- 2 Tbsps Crème fraiche

1 Measuring cups, 2 große Pots (mit Deckel), 1 Cutting board, 1 Sieve, 1 Small knife, 1 Slotted spoon, 3 Bowls (groß, mittel, klein), 1 Paper towel, 1 Teaspoon, 1 Large knife, 1 Wooden spoon, 1 Tablespoon, 1 Citrus juicer, 1 Whisk
Preparation steps
1.
Soak the beans overnight.
2.
Peel and finely chop the onion and garlic. Saute in 1 tbsp of hot oil.
3.
Pour in the broth. Add the drained beans and 3 thyme sprigs. Cook until soft, stirring occasionally (approximately 45 minutes).
4.
Drain the beans. Collect the broth by placing a bowl underneath.
5.
Remove the thyme sprigs.
6.
Press the beans through a sieve.
7.
Stir in the creme fraiche, 2 tbsp of oil and enough broth to form a creamy puree.
8.
Season with salt and pepper to taste. Drizzle the remaining olive oil over the top.
9.
Remove the leaves from the remaining thyme sprig and use as garnish.
