Watermelon with Mozzarella and Basil
Drain the mozzarella thoroughly, then mix with the lime juice, lime zest, pink pepper, and the oil.
Cover and let marinate in the refrigerator for 30 minutes.
Cut the watermelon into large triangles (and peel if you'd prefer).
Arrange the watermelon on plates and top with the mozzarella mixture. Garnish with basil and serve.
