This beautiful, summertime salad contains nutrients like vitamin A and B6 from the watermelon and satiating protein from the feta cheese.
If you're not a fan of olives, simply omit them from the recipe.

- 3 Tbsps olive oil
- 2 Tbsps lemon juice
- 1 Tbsp Cider vinegar
- ½ bunch thyme
- ½ chilled Watermelon
- 1 ⅓ cups Feta (diced)
- 10 black Olives (pitted)
- Arugula (washed)
- 1 tsp dried Pumpkin seed
- 1 tsp Sunflower seed (toasted)

Preparation steps
1.
Beat together the olive oil, lemon juice and vinegar and add a few thyme leaves. Chill.

Cut out balls of watermelon using a melon baller or ice cream scoop.
3.
Arrange the melon balls, diced feta cheese, olives, herbs, arugula, pumpkin seeds, and sunflower seeds attractively in the hollowed-out watermelon. Sprinkle with dressing and serve immediately.
