For the sorbet
1 Lime
200 grams sugar
200 milliliters water
100 milliliters dry Sparkling wine
1 pc Watermelon (500 g)
For serving

Preparation steps

For the sorbet: Rinse, zest and juice the lime.

Combine the sugar, lime zest, lime juice, and water in a saucepan and bring to a boil while stirring and then simmer for about 3 minutes. Remove from the heat and stir in the sparkling wine.

Remove the seeds and rind from the watermelon. Finely chop the flesh and then puree it and stir the puree into the sugar water.

4.

Pour the mixture into a metal bowl and place in the freezer for a total of about 3 hours. After an hour stir well with a fork, return to the freezer, and stir every half hour from then on.

5.

For serving: To serve, scoop the sorbet into chilled glasses and garnish with mint leaves
