- 2 large onions
- 60 grams butter
- 1 Chicken broth
- Horseradish (grated fresh or glass)
- 1 pinch Nutmeg
- 1 Tbsp Caper
- 1 pinch cinnamon
- salt
- freshly ground peppers

Preparation steps
1.
Blanch the flowers in salted water 2-3 minutes. Drain.

Dice the onion and sweat in a large pan in hot butter. Add the flowers and sauté briefly. Pour in the chicken broth and simmer for about 10 minutes. Pull the soup from the heat, add the capers and mash. Season with salt, pepper, nutmeg, cinnamon and horseradish.
3.
If water lilies are not available in your area, a possible substitute is a mixture of zucchini and watercress.
