5.333 cups Rhubarb (half a stick set aside, remainder sliced)
½ unwaxed lemon (juiced)
cup granulated sugar

Preparation steps

1.
Place the sliced rhubarb in a pot with a the lemon juice and sugar and 150 ml water and bring to the boil. Simmer on a medium heat for around 10 minutes.
2.
Purée the mixture, sieve and place in a metal bowl and freeze for 5 hours, stirring with a fork every 30 minutes.
3.
Cut the remaining rhubarb into very thin slices. Place scoops of the sorbet on plates on in bowls and serve garnished with the remaining rhubarb.
