1 bunch Arugula (small)
1 large onion
¼ white Cabbage
1 carrot
cup vegetable stock
1 Tbsp butter
2 Tbsps Oil
salt

Preparation steps

1.
Chop the bacon. Peel and finely dice the onion. Finely shred the cabbage. Wash and peel the carrots and slice thinly lengthwise, using a mandolin vegetable slicer if available.

Fry the bacon in a dry frying pan over a medium heat until crisp, then take out of the pan. Add the butter and oil and heat. Add the cabbage and sweat briefly, then stir in the carrots and onions and sweat briefly. Add the stock, cover and cook for 5 minutes.

Meanwhile cook the pasta in plenty of salted water according to the package instructions until al dente.
4.
Wash the rocket, shake dry and chop roughly. Mix the bacon with the vegetables.
5.
Drain the pasta and mix with the vegetable mixture along with the rocket. Season to taste with salt and pepper and serve in bowls.
