1 cup Mascarpone
cup double cream
4 Tbsps runny honey
6 Peaches
1 cup sliced almonds

Preparation steps

1.
In a bowl, combine the mascarpone, cream and 1 tbsp honey, mix well, and place in the refrigerator for at least 1 hour.

Toast the flaked almonds under the grill until they start to colour, keeping a watchful eye, as they are quick to burn.
3.
Plunge the peaches into boiling water for 20 seconds and then into cold water. Skin the peaches and cut them in half, removing the pits.
4.
Place the half fruits in a large ovenproof dish cut side upwards. Drizzle with 2 tbsp runny honey and place under the grill for 6 to 10 minutes until caramelised.
5.
Place 3 peach halves onto each plate, add the chilled mascarpone cream mixture, and sprinkle the toasted flaked almonds on top.
6.
To each peach half, give a turn of the pepper mill. Add a drizzle of honey to complete the dish.
