125 grams butter
3 Tbsps honey
4 eggs
1 pinch salt
150 grams Pastry flour
100 grams ground, blanched almonds
1 generous pinch Baking powder
250 grams Natural yogurt
butter (for greasing)
For the fruit cream
1 Kiwi
150 grams red Currants
3 ripe Apricot
200 milliliters Whipped cream
3 Tbsps powdered sugar
Additional ingredients
mint (for garnish)

Preparation steps

1.

Beat the butter with the honey until creamy. Gradually add the eggs and 1 pinch of salt. Mix the flour with the almonds and baking powder and stir in the yogurt.

Preheat waffle iron and grease lightly.

3.

Spoon 1-2 tablespoons batter onto the waffle iron and cook waffles successively until golden brown.

Peel the kiwi and cut into small pieces. Rinse the currants and drain well. Blanch the apricots, rinse with cold water, peel, halve, pit and thinly slice. Whip the cream with the powdered sugar until stiff and mix in the fruit.

5.

Serve the waffles with the fruit cream on plates and serve garnished with mint leaves.
