Preparation steps

1.

Cut the cucumber in half lengthwise, scrape out the seeds, then cut into 0.5 cm (approximately 1/4 inch) thick matchsticks. Peel the carrot and cut lengthwise into 5 mm (approximately 1/4 inch) thin sticks. Rinse the scallions and cut in half lengthwise. Rinse the sprouts and dry. Peel the avocado pieces, cut lengthwise into strips and sprinkle with lemon juice immediately.

2.

Toast the sesame seeds in a dry skillet. Remove from the pan and allow to cool on a flat plate.

3.

Wrap each sushi rolling mat with plastic wrap and place a nori sheet on top with the smooth side out. Spread half of the sushi rice on it, press down gently and turn gently so that the rice is on the side.

4.

Place on the lower third of the sushi mat half of the cucumber sticks, carrot sticks, scallions, sprouts and avocado strips. Spread wasabi on top and roll the whole thing using the rolling mat. Use the rest of the ingredients to form a second roll. Roll the sushi rolls in the black sesame seeds and cut each into 6 equal pieces.
