½ cup Sushi rice (rinsed well)
¾ cup cold water
2 Tbsps Rice vinegar
1 tsp salt
1 Tbsp granulated sugar
fresh Basil (rinsed and dried)
½ cup sun-dried tomato tapenade
1 ball Mozzarella (drained and cut into strips)
In Addition
2 sushi mat (for rolling)
Wasabi
light soy sauce

Preparation steps

In a medium saucepan, bring rice and water to the boil and gently simmer for about 15 minutes or until the liquid is absorbed. Cool slightly and transfer to a bowl. Heat the rice vinegar; add the salt and sugar, stirring until the sugar dissolves. Drizzle vinegar mixture over over the cooked rice and fluff the rice with chopsticks (do not stir). Let the rice cool completely.

Cover the sushi mat with plastic wrap (to prevent sticking). Wet hands with cold water and press sushi rice onto covered mat. Overlap the basil leaves in a thin layer over the rice and cover with a sheet of plastic wrap and cover with the 2nd sushi mat, invert, remove the top mat and sheet of plastic wrap (the rice should be facing upward).

Position the rice and basil so that the long side is facing you; spread half of the tapenade in a strip down the side facing you. Top with strips of mozzarella followed by another layer of tapenade. Wet hands again with the water and, with the help of the second sushi mat, roll the rice toward you in a jelly-roll fashion. Be sure to roll tightly, but without too much pressure, to ensure an even sushi roll. Unwrap the sushi mat and then, with a clean and sharp knife, cut into bite-size pieces. Serve with wasabi and light soy sauce, if desired.
